I'd actually recommend staying away from HEB because their sushi isn't that great (though it may just be their ingredients). The two places that I would try are Zen (several locations around town), and Banzai is on 40th & Lamar, right next to the EZ's. Both places roll their own, and I'll bet that one of the employees would be willing to hire him/herself out. This sounds like a blast. You'll have to let me know how it went. What a great idea.
